Guatemex Restaurant now open in Wickliffe

Wickliffe - A little taste of Mexico and Guatemala has just made its way into Ballard County, and by the way it made its entrance, it seems it is just want everyone was waiting for.

Celso Lopez and Luis Lemus have joined forces to open Guatemex Restaurant in Wickliffe at the former Hillbilly Café across from the Courthouse. Ever since they opened on June 22nd, they have been busy almost non-stop, ”We knew it would be good, but not this good,” said Lemus as he talked about the amount of customers that have come in to try out the new restaurant.

According to Lemus, his mother owns a Mexican store in Murray. They decided to come to Wickliffe because they felt there were already too many restaurants in Murray.

The first week was a bit of a test for Lopez and Lemus as they were trying to work things out to make service go more smoothly. With so many to-go orders from James Marine (where Celso is employed) and other businesses, in addition to the amount of walk-in customers, the two owners have been strategizing to lessen the amount of wait time for their customers.

The menu at Guatemex offers such a great amount of choices that everyone is sure to find something he or she likes, whether it is a tried-and-true favorite or something new.

When it comes to tacos, customers can order either crispy or soft tacos, but there are many more choices from which a taco lover can choose. Guatemex serves an array of tacos to meet every taste. The choices include: tacos al carbon, tacos carnitas, tacos carne asada, tacos de chorizo, and fish tacos along with shrimp tacos.

The restaurant offers choices that rival any other menu items in any of the surrounding big cities such as Murray, Paducah, and Mayfield. They offer Mexican favorites to which everyone seems to be drawn. Some of these include: Fajitas, Fajita burritos, chalupas, taquitos, taco salads, tostados, chili rellenos, tamales, enchiladas, and chimichangas,    

For those who enjoy quesadillas, Guatemex offers a Quesadilla Rellena, which is a flour tortilla grilled and filled with cheese, chopped Mexican sausage, beef or chicken, beans with lettuce, guacamole and sour cream. It is also available filled with seasoned ground beef or chicken and topped with lettuce, tomato, sour cream and cheese.

Guatemex also offers specialties including steak, shrimp and chicken entrees Polio Jalisco, which consists of strips of marinated chicken and rice all topped with cheese, is just one of the special menu items.

The House Special includes one chicken burrito, one chicken enchilada topped with lettuce, sour cream, pico de gallo and guacamole. For those who cannot decide on just one item, the list of combo options is sure to please everyone.

Guatemex also offers a special lunch menu and children’s menu.

Celso and Lemus plan to carry additional authentic Mexican products such as Horchata (a rice-milk beverage). They also hope to expand in the future.
